It's Monday!

Shake and Bake Chicken from Allrecipes.com


I didn't make the shake and bake chicken this last weekend so I'm making it tonight. So simple and easy! This crockpot lemon chicken doesn't get much simpler either!

The recipe for Crockpot Lemon Chicken is another one I found on pinterest with a link that led nowhere. The exact quoted text is a little garbled but here's what I'm going to do and I'll modify the post if I change something while I'm cooking it. 

Recipe: Crockpot Lemon Chicken
Ingredients:
1 Packet Dry Italian Dressing Packet (I'll just use Italian seasoning, I couldn't find any italian dressing mixes at the store.)
1 Stick Salted Butter
1 Tbsp Lemon Juice

Directions:
Layer the butter, chicken and Italian dressing mix, followed by the lemon juice. Cover and cook on high 4-5 hours or low 6-8.

Menu Monday

I will link to the Overnight Oatmeal recipe but their website kept crashing my browser, so I thought I would just copy it here. Here's the link to the Fabulousfoodblog.com. I have not tried this recipe yet but I will post and tell you how it is this week.

Here's the recipe: Overnight Oatmeal
Ingredients:
2 Apples, sliced
1/3 cup Brown Sugar (or to taste)
1 teaspoon Cinnamon
2 cups Oatmeal
4 cups Water

Directions:
Layer sliced apples, brown sugar, cinnamon, oatmeal and water in crock pot - in that order. DO NOT stir.
Cook over night 8-9 hours.

Menu Monday

Recipes:
Melt in your Mouth Chicken (recipe at bottom of page)
Garlic Mashed Potatoes
Pepperoni Crescent Rolls
Spaghetti with Turkey Meatballs

"Melt in your Mouth Chicken"
Ingredients:
1/2 c parmesan cheese
1 c Greek yogurt, 1 tsp garlic powder
1 1/2 tsp seasoning salt
1/2 tsp pepper

Directions: 
Spread mix over chicken breasts
Bake at 375 for 45 minutes

I haven't tried this recipe, it's another one I found on Pinterest that I couldn't find a website for. It sounds a lot like the Parmesan Chicken but a bit spicier and healthier (no mayo).

Menu Monday... is back!

Our recipes this week:
Baked Ziti

Cheese and Baked Potato Rounds
Frito Pie
Crockpot Pineapple Chicken (see below)

I have to start this week off by saying I am so glad to be doing a menu again after the Holidays. I was very burnt out on it and didn't really want to keep doing it but after just one week of "what's for dinner?" - with the dreaded answer "I don't know." I'm ready to start again and keep it going.

The last menu I put up had Ranch Cheddar Chicken and Beef Stew on it. The ranch cheddar chicken was a little too bitter for me, I think because I used sharp cheddar cheese, but Sly and Sylvester liked it. The beef stew was a hit all around - it was the most prepping I've done for a crockpot recipe before, but completely worth it, none of it went to waste. 

I have another recipe I found on Pinterest but can't find any website to link it to, if you've seen this somewhere, please let me know!

Recipe: ***(Please note that I have not made this recipe yet! I will make it this week and let you know how it goes next week)***
Crockpot Pineapple Chicken
Ingredients: 
1 cup pineapple juice 
1/2 cup packed brown sugar 
1/3 cup light soy sauce 
2 pounds chicken breast tenderloins.
Directions:
Cook on low 6-8 hrs and they should just fall apart.

Recipe: Sausage Balls

I'm glad to be sitting down to finally write up the Sausage Balls recipe. I've been meaning to for a while but normally I'm glad to just get the menu done for the week, haha. So here goes...

Recipe:
Sausage Balls

Ingredients:
3 cups Bisquick
2 cups shredded sharp cheddar cheese
1 pound ground sausage (I use mild, Dad uses hot)

Directions:
Mix above ingredients in order given. I like to use the electric mixer, but if you mix by hand you basically have to kneed it like bread dough. 
It's pretty crumbly but that's exactly how it should be, don't think you need to add water, it's not a dough.
Roll into 1 inch balls and place on an ungreased cookie sheet. I love my silicone pan liners. :D
Bake at 350 for 20-25 minutes. They will be golden brown when they're ready, but please make sure the sausage is thoroughly cooked before eating.

I found this recipe for Hawaiian Crockpot Chicken on Pinterest, but apparently the original blog isn't updated anymore and the recipe isn't there. Here's a link to the original blog.

Here's the recipe:
Hawaiian Crockpot Chicken:
4-6 chicken breasts, 
Hawaiian style BBQ sauce,
Can of crushed pineapple 
Throw everything in for 6 hours on low. 
THIS WAS UNBELIEVABLE! Served with roasted broccoli and rice.
